mommy- olive oil will work, but depending on the brand , may alter the flavor. You may have to season it a bit more, too

I like using a plain, light olive oil for replacing butter. Otherwise buy the smallest bottles of extra virgin, until you find one you like to add to salads, etc. I always have both. Bertelli is good, they all are actually, but the xtra virg. is too heavy for my taste as a butter replacement.
