What would happen if 30-40 of us got in line tonight at the PP? Anyone actually done that after the puck was found?
But if anyone is wanting to make Swedish meatballs and doesn't have a recipe, here is a good one:
Swedish Meatballs
2 lb. ground beef
2 lb. ground pork
1 egg, beaten
Put in large bowl
¾ c. milk
¼ c. water
2 T. cream or half-and-half
1 medium onion chopped fine, sautéed, cooled
½ - ¾ c. fine bread crumbs
salt
pepper
Mix well. Roll into small balls, about 1” diameter.
Put on large cookie sheet. Brown in 350 degree oven approximately 7-10 minutes. Put in large casserole or roaster and bake at 325 degrees for one hour (covered). Make gravy from drippings.
I also have what is supposed to be the spaghetti and meatball recipes from Geno's (formerly of 600 block of Payne Avenue, overlooking Swede Hollow) - if anyone wants the recipes let me know. I've made them - they are close if not the exact same. I miss Geno's.
¼ c. olive oil
½ onion, chopped
2 cloves garlic, minced
2 cans tomato puree (total 28oz)
2 small cans tomato sauce (total 30oz)
salt and pepper
1 t. dried basil or 1 T. fresh basil, chopped
1 T. beef base
¼ - ½ c. water
Warm oil over low heat. Add onion and garlic. Cook 5-10” or until onion is translucent. Add puree and sauce, season with salt and pepper. Taste. If bitter, add a pinch of sugar. Add basil, beef base and a little water. Simmer at least 1 hour. Sauce is done when oil rises to top.
GenoÂ’s meatballs (makes 12 meatballs)
1 lb. hamburger (finely ground)
2 ½ slices bread (or bread crumbs) (if using ready-made bread crumbs – use the amount stated on the container for 1 lb. of meat or less)
1 egg, beaten
salt, pepper, garlic salt
1 t. dried basil or 1 T. fresh basil, chopped
Preheat oven to 400 degrees.
Put hamburger in medium bowl. Wet bread slices with water, squeeze water out, tear bread into pieces and add to bowl. Add egg and seasonings. Mix well. Roll into 2-3” balls. Bake 30” in baking dish. Cover midway through baking time, rather than letting the meatballs get too crusty/brown. Once baked, may be added to spaghetti sauce.
Serve over cooked pasta.
And my wife says I'm cranky.
